In a heavy skillet, brown ground beef with onion in the vegetable oil. Add tomatoes, chili powder, Buffalo Tom's Gourmet Hot Sauce, and 1 teaspoon salt; cover and simmer for 25 minutes, adding more water if necessary. In a medium saucepan, bring 2 cups water to a boil; add corn meal. Cook, stirring constantly, until mixture is thickened. Add 1 teaspoon salt. Spread half of the cornmeal mixture in bottom of greased 1 1/2-quart casserole. Add beef mixture. Top with remaining cornmeal mixture. Bake at 350° for 35 to 40 minutes. Serves 4. |
